Meet Chef Stefano Corvucci

If you’ve ever dreamed of learning to cook real Italian food, you’ll love meeting Chef Stefano Corvucci.

A third-generation chef, Stefano grew up in Forli and Bologna, Italy, where his love of cooking began at home, shaped by family traditions, shared meals, and stories passed down through generations. Inspired by his father’s storytelling and Pellegrino Artusi’s iconic cookbook, he learned early on that food tells the history of a place and its people.

He earned a law degree from the University of Bologna but soon realized his true calling was in the kitchen. After running several successful restaurants, he founded The Culinary Institute of Bologna (CIBO) in 2012, where he taught students from around the world how to cook authentic Italian dishes using local ingredients and timeless techniques.

A Taste of Italy on Mt. Fumaiolo

Today, Chef Stefano and his family host guests at at their historic home on Mt. Fumaiolo, once part of a 19th-century monastery. Here, Italy Culinary Vacations remains family-owned and operated, with Stefano personally leading experiences and welcoming guests into a setting that feels more like a home than a school. Much of the cooking takes place over an open hearth fire, using the original stone oven once used by the monks to bake bread.

Located on the border of Tuscany and Emilia-Romagna, this unique setting allows guests to experience two of Italy’s most celebrated culinary regions in one unforgettable stay.

Through Italy Culinary Vacations, Stefano creates immersive hands-on experiences where guests learn to prepare regional Italian dishes, visit local markets, and explore hidden corners of Italy all while enjoying great food, wine, and company.

He isn’t just a chef, he’s a storyteller and private guide who shares the best of Italy in a way most travelers never see. His passion for food and hospitality makes every experience personal, relaxed, and memorable.
