Itinerary

Your journey begins on Mt. Fumaiolo, where the Tiber River begins. You’ll cook side-by-side with Chef Stefano, visit small medieval villages, and shop at local family-run markets for fresh ingredients.

After four days of cooking and exploring, you’ll travel south along the Tiber River and reach Rome. Experience Rome the way most travelers never do — relaxed, personal, and fully guided. Wander ancient streets, explore world-class museums, admire Baroque masterpieces, browse artisan shops, and enjoy authentic Roman cuisine — without the stress of planning or navigating the city.

With your private guide, you’ll see the Eternal City through local eyes: historic piazzas at golden hour, quiet churches with hidden frescoes, neighborhoods where Romans actually live, and trattorias serving Cacio e Pepe, Gricia, and Carbonara the way they were meant to be enjoyed. This is Rome at its most iconic — history, art, and food woven into each day.

After spending 3 nights in Rome, we’ll head and visit Pompei, the ancient Roman city buried under the volcanic ash in the eruption of Mount Vesuvius in 79AD. Then we’ll reach Positano on the Amalfi Coast, one of Italy’s most iconic seaside destinations. You’ll stay in a 5-star hotel right in the heart of town, surrounded by boutiques, artisan ceramics, coastal cafés, and panoramic sea views. Explore the coastline by private boat and scenic drives, without worrying about traffic, parking, or planning.

This is the Amalfi Coast at its best — elegant, relaxing, and effortlessly beautiful. You’ll spend 3 nights in Positano with private guided exploration each day. From hidden beaches to cliffside terraces, scenic overlooks, small coastal villages, local shops, and unforgettable sunset aperitivo spots — your guide will handle logistics so you can simply enjoy.
Boat excursions, scenic drives, and meals in breathtaking settings can all be included based on your preferences. A complete, detailed day-by-day itinerary will be customized around your interests and finalized based on seasonality and opening schedules.

Sample Itinerary

  • Day 1: Pick-up in Florence or Bologna and drive to Mt. Fumaiolo. Check-in, and cooking class, lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 2: Breakfast at the local piazza cafe or home, drive to San Piero in Bagno for fresh, seasonal ingredients. Lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 3: Breakfast at the local piazza cafe or home. Hike to the Tiber River Spring, Cooking class at home (1-2 hrs) and Lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 4: Breakfast at the local piazza cafe or home. Check out and drive to Rome along the Tiber River, check-in and afternoon walk. Aperitif followed by dinner at a local restaurant.
  • Day 5: Breakfast. Visit the town and walk on the Fori Imperiali to the Colosseo with a guide. Lunch at a local restaurant followed by time to explore local shops. Afternoon visit to Musei Capitolini to discover Caravaggio.
  • Day 6: Breakfast followed by time to explore local shops. Afternoon visit to Villa Borghese.
  • Day 7: Breakfast and check out. Visit Pompei, the ancient Roman city buried under the volcanic ash in the eruption of Mount Vesuvius in 79AD. Check-in Positano where a charming room right on the gulf water and a stunning sunset will be waiting for you. Dinner at a local restaurant featuring fresh seafood.
  • Day 8: Breakfast. Private boat tour on the gulf and hunch on the sea. Aperitif and dinner at a local restaurant.
  • Day 9: Enjoy the village strolling around exploring local shops or private seafood cooking class on a terrace with a view of the gulf. Dinner at a local restaurant or enjoying the seafood we prepared together.
  • Day 10: Breakfast and check out, drop off to be arranged.

During your immersive cooking class experience you’ll have exclusive access to Chef Stefano’s 4 bedroom, 2 bathroom historic stone house — completely private for you and your group. This 19th-century retreat features charming antiques, two fireplaces, a traditional stone oven, and a peaceful garden along the early waters of the Tevere (Tiber) River. It’s quiet, authentic, and the perfect place to unwind after a day of cooking and exploring.

After your immersive cooking experience, you’ll spend 3 nights in a boutique hotel near the ancient Roman Forum — just a short walk from the Colosseum, Capitoline Hill, and charming cobblestone streets lined with cafés and shops. Enjoy elegant rooms, historic surroundings, and the ability to explore the Eternal City entirely on foot.
