Stefano is the ‘real deal’ - a teacher, friend, and companion for adventures. He sees what he’s doing as nothing less than his calling, and his irrepressible passion always abounds, whatever twists and turns the journey may bring. Like the spring of Tiber on the slopes above his village, Stef is a font, both of knowledge in the culinary arts and many others, and also of stories, from childhood to now, of a life well-lived between the mountains and the sea. If you’re searching, like we were, for that elusive ‘something more’, hoping to see the real Italy and the ‘bellezza’ of life in this enchanting country, this may well be where you find it. We are so glad we came! Grazie mille Stefano e Carla, amore sempre d’Australia. Torneremo!

My wife and I spent a week with Chef Stefano in May 2023. We had an amazing experience as we discussed where Italian food, wine and culture intersect. We learned so much about how the people work, live, play and (most importantly) eat. Stefano dispelled so many myths by opening our eyes to a whole new world of Italian home cooking like we have never seen it before. Go spend a week with Stefano with an open mind and hungry for food, wine and knowledge. Drink it up and it will be a vacation of a lifetime. We can't wait to go back (or Stefano to come visit us in New Jersey.)

I recently had an incredible experience staying with Chef Stefano in Monte Fumaiolo, and I highly recommend this experience to anyone who loves great food, beautiful scenery, and cultural immersion. Stefano is an excellent chef who taught me how to cook some truly amazing Italian dishes during my stay. From fresh pasta to local specialties, every meal was a delight for the senses. But this experience was about so much more than just cooking - we also went on some incredible hikes in the surrounding area. Stefano was an excellent guide and shared his deep knowledge of the history and culture of Italy with me along the way. What really made this experience so special was Stefano himself. He is warm, welcoming, and passionate about sharing his love of Italian cuisine and culture with others. I left feeling not just like a better cook, but also like I had gained a deeper understanding of this wonderful country and its people. If you're looking for a unique and unforgettable experience in Italy, I highly recommend staying with Chef Stefano in Monte Fumaiolo. You won't regret it!

I have been fortunate to attend cooking classes all over the world. But I had never done an immersion cooking school until our 3-day experience with Stefano Corvucci. I loved watching chefs but I always wanted more. Having a private, hands-on cooking marathon exceeded my expectations. We were able to shop, prepare and dine on the Italian favorites my family loves. And the best part, I am able to continue the experience in my own kitchen with local ingredients found in my home markets. My experience at Stefano’s home kitchen changed how we prepare & love pasta, pancetta, & parmesan. The lessons I learned by cooking with the chef, rather than just watching, resulted in a more valuable experience. I highly recommend Stefano Corvucci without hesitation.

CIBO is the best cooking school I have ever attended. I booked the 2 week course: it exceeded all expectations. Chef Stefano teaches with great flexibility, relentless energy, and contagious passion. He focuses on techniques/principles rather than recipes, so now, I feel like I can confidently adapt and create dishes according to my local ingredients. Additionally, Stefano is extremely knowledgeable about the history, culture, and reasoning behind Italian cooking—this has greatly enriched my understanding and appreciation of food. The menu was improvised every day based on market availability and our personal taste preferences. One day, we deboned chickens and cooked several dishes using the various parts. Another day, we prepared 9 different varieties of seafood from scratch. And of course, we made many many kinds of pasta. :)
