This 7 day culinary vacation includes 4 days of hands-on cooking classes in the mountains near Tuscany — plus a 3 day private guided stay in Orvieto. You’ll first immerse yourself in cooking authentic Italian dishes with Chef Stefano in a historic home near Tuscany on Mt. Fumaiolo. Leaving with culinary chops and a deeper appreciation for Tuscan cuisine, you will then head south to explore one of Italy’s most fascinating ancient hill towns. Over 7 days, you’ll enjoy regional food, learn real Italian techniques, and discover hidden places most travelers never experience.

Itinerary

Your vacation begins with immersive Italian cooking classes near Tuscany, where you’ll prepare authentic dishes, visit local markets, and learn hands-on skills from Chef Stefano. Then you’ll continue to Orvieto for a private guided stay — exploring its historic center, the Etruscan heritage of the region, and nearby iconic towns and landscapes. This experience blends hands-on culinary learning with the cultural treasures of central Italy.

Lodge in the heart of this riveting region and savor the authentic flavors of Umbria cuisine. Venture beyond to see Civita di Bagnoregio, known as the ‘ghost town,’ Pitigliano, and the romantic shores of Lake Bolsena. Orvieto will enchant you with its incredible history, cultural treasures, and the warm embrace of Umbria’s culinary delights.

A complete, detailed day-by-day itinerary will be customized around your interests and finalized based on seasonality and opening schedules.

Sample Itinerary

  • Day 1: Pick-up in Florence or Bologna and drive to Mt. Fumaiolo. Check-in, and cooking class, lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 2: Breakfast at the local piazza cafe or home, drive to San Piero in Bagno for fresh, seasonal ingredients. Lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 3: Breakfast at home or at the local piazza cafe, cooking class (2 hrs) and lunch. Late afternoon cooking class (3 to 4 hrs) and dinner.
  • Day 4: Breakfast at the local piazza cafe or home. Check out and stop Visit Citta’ di Castello (Umbria). Drive to Orvieto, Check-in and afternoon walk. Dinner at a local restaurant.
  • Day 5: Breakfast. Visit the town and the Duomo with a Private Guide. Lunch and exploring. Afternoon visit to Orvieto Underground.
  • Day 6: Breakfast. Private boat tour of Lago di Bolsena and lunch on the lake. Afternoon visit to Civita di Bagnoregio.
  • Day 7: Breakfast and check out, drop off to be arranged.

Accommodations

For the 4 days of your immersive cooking classes you’ll have exclusive access to Chef Stefano’s 4 bedroom, 2 bathroom historic stone house — completely private for you and your group. This 19th-century retreat features charming antiques, two fireplaces, a traditional stone oven, and a peaceful garden along the early waters of the Tevere (Tiber) River. It’s quiet, authentic, and the perfect place to unwind after a day of cooking and exploring.

Your next 3 nights will be spent in the heart of Orvieto’s historic center, in a beautifully restored boutique property surrounded by medieval stone streets, artisan shops, and lively piazzas. From your door, you can wander cafés, wine bars, and local boutiques — all wrapped in the charm of this hilltop city. It’s peaceful, walkable, and feels like living inside an Italian history book — but with modern comforts and warm Umbrian hospitality.
