Combining hands-on cooking classes with private cultural excursions through Tuscany, Romagna, Umbria, and the Montefeltro region, you’ll experience 3,000 of years of history through the eyes of someone deeply passionate about sharing the Italy he calls home.

Each day blends authentic culinary experiences with meaningful cultural discoveries—from local markets, wineries, and artisan producers to Etruscan settlements, medieval hill towns, Renaissance treasures, and hidden villages that most travelers never find on their own. Best of all, every detail is thoughtfully curated, allowing you to simply enjoy the journey.

Back in Stefano’s historic Italian home, you’ll prepare regional recipes using traditional techniques before gathering around the table to enjoy the meal you’ve created together. Along the way, you’ll discover not only how Italians cook, but how centuries of history, art, family traditions, and local ingredients continue to shape everyday life.

Itinerary

Each day blends hands-on cooking with Chef Stefano, thoughtfully curated cultural experiences, and time to slow down and enjoy the rhythms of everyday life in Italy. Together, you’ll visit bustling local markets, medieval hill towns, artisan workshops, wineries, and historic sites while discovering how thousands of years of history continue to shape the region’s food, traditions, and way of life.

Whether you’re wandering through an Etruscan village, tasting olive oil at a family-owned producer, shopping for seasonal ingredients, or preparing fresh pasta in Stefano’s historic home, every experience has been personally selected to help you experience Italy beyond the typical tourist trail.

Just as importantly, you’ll never feel rushed. Our itineraries are intentionally flexible, allowing time for long lunches, meaningful conversations, spontaneous discoveries, and simply enjoying the peaceful surroundings of Mt. Fumaiolo.

Every itinerary is customized for your group and finalized based on the season, local events, and the experiences that will make your journey uniquely yours. Because Stefano customizes every itinerary based on the season, local festivals, market availability, and your group’s interests, no two weeks are ever exactly the same.

Sample Itinerary

  • Day 1: Pick-up at Arezzo or Cesena railway stations, drive to Mt. Fumaiolo, check-in and lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 2: Breakfast at the local piazza cafe or home, drive to Bagno di Romagna for fresh, seasonal ingredients. Lunch. Late afternoon cooking class at 4pm (3 to 4 hrs) and dinner.
  • Day 3: Breakfast. Visit Montefeltro (Emilia Romagna) and have lunch in San Leo at a local restaurant. Late afternoon cooking class at 4pm (3 to 4 hrs) and dinner.
  • Day 4: Breakfast. Take a guided hike on Mt. Fumaiolo or visit Ravenna. Cooking class (2 to 3 hrs) and lunch. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner. An alternative option for this day can include a visit to the Etruscan town of Cortona (Tuscany) and Lake Trasimeno (Umbria) with an overnight stay.
  • Day 5: Breakfast. Visit Citta’ di Castello and Citerna in Umbria and enjoy lunch at a local restaurant. Late afternoon cooking class at 4pm (3 to 4 hrs) and dinner.
  • Day 6: Visit Sansepolcro and Anghiari in Tuscany and enjoy lunch at a local restaurant. Late afternoon cooking class around 4pm (3 to 4 hrs) and dinner.
  • Day 7: Breakfast, cooking class (2 hrs) and lunch. Check-out and drive to the train station on the morning or afternoon according to your schedule

During your stay, you’ll have exclusive access to Chef Stefano’s 4 bedroom, 2 bathroom historic stone house — completely private for you and your group. This 19th-century retreat features charming antiques, two fireplaces, a traditional stone oven, and a peaceful garden along the early waters of the Tevere (Tiber) River. It’s quiet, authentic, and the perfect place to unwind after a day of cooking and exploring.

This all-inclusive retreat is available year-round, based on availability. Pricing is listed per person, and includes everything during your stay — accommodations, meals,wine, transportation, cooking classes, and ingredient shopping with Chef Stefano.
