This immersive 4-day cooking retreat is inspired by Pellegrino Artusi—the father of modern Italian cuisine—and is designed for food lovers and home cooks of all skill levels.
Through approximately 20 hours of hands-on cooking classes, you’ll build confidence in the essential techniques behind traditional Italian meals. You’ll learn to prepare handmade pasta without machines, create classic sauces, work with seasonal vegetables and regional cheeses, and cook approachable dishes featuring chicken, pork, and beef.
You’ll stay in a private stone house that was once part of a monastery, complete with fireplaces, a traditional stone oven, and a peaceful garden along the early waters of the Tevere, or Tiber, River. Visits to local markets introduce you to the fresh ingredients, regional specialties, and seasonal rhythms that shape everyday Italian cooking.
This isn’t a formal classroom. It’s real Italian cooking in a real Italian home, guided by a chef who teaches the techniques behind each dish—not simply the recipe.
By the end of your stay, you’ll have prepared a varied collection of classic dishes and gained the practical skills and confidence to recreate authentic Italian meals at home.

Each day includes hands-on cooking with Chef Stefano using fresh, seasonal ingredients selected from local markets. Classes focus on the essential skills of Italian home cooking, including handmade pasta, classic sauces, traditional meat preparation, seasonal vegetables, and balanced menu planning.
Across the retreat, you’ll prepare multiple dishes for shared lunches and dinners, learning how individual courses come together to create a complete Italian meal. The program is intentionally approachable and flexible, allowing Chef Stefano to adapt the dishes to the season, ingredient availability, and your group’s interests and experience level.
There are no formal guided tours during this 4-day cooking retreat. Breaks between classes give you time to enjoy the peaceful surroundings of Mt. Fumaiolo, visit the nearby village of Balze, relax over a coffee or aperitivo in the piazza, hike local trails, or simply unwind at the house.
This retreat is ideal for guests seeking a concentrated introduction to authentic Italian cooking, with plenty of personal instruction and time to enjoy life on the mountain.
