Learn to cook authentic regional dishes side-by-side with Chef Stefano in his historic 19th-century home on Mt. Fumaiolo near Tuscany during a 4 day immersive experience. This hands-on retreat is inspired by Pellegrino Artusi — the father of modern Italian cuisine — and is designed for all skill levels, from first-time cooks to culinary professionals.

You’ll stay in a private stone house that was once part of a monastery, complete with fireplaces, a stone oven, and a garden that sits along the source of the Tevere (Tiber) River. You’ll visit local markets to select seasonal ingredients, and cook traditional dishes using fresh produce, local cheeses, meats, and regional specialties.

This isn’t a classroom, it’s real Italian cooking in a real Italian home guided by a chef who teaches technique, not just recipes.

By the end of your stay, you won’t just leave with new skills you’ll leave with memories, confidence, and a true taste of Italy.

Itinerary

Each day includes hands-on cooking with Chef Stefano using fresh, seasonal ingredients selected from local markets. There are no formal tours during this 4-day retreat and breaks between classes, giving you plenty of time to enjoy the peaceful surroundings.

Guests can visit the nearby Balze village square, relax with a coffee or aperitivo in the local bar, go hiking on Mt. Fumaiolo, or explore nearby restaurants in their free time. This retreat is designed to be calm, personal, and focused on cooking — with space to enjoy the mountain at your own pace.

Sample Itinerary

  • Day 1: Pick-up at Cesena or Arezzo Train Station, drive to Mt. Fumaiolo, Cooking class (1 to 2 hrs) and lunch. Late afternoon cooking class (3 to 4 hrs) and dinner.
  • Day 2: Breakfast at home or at the local piazza cafe, drive to San Piero in Bagno for fresh, seasonal ingredients. Cooking class at home (1 to 2 hrs) and lunch. Late afternoon cooking class (3 to 4 hrs) and dinner.
  • Day 3: Breakfast at home or at the local piazza cafe, cooking class (2 hrs) and lunch. Late afternoon cooking class (3 to 4 hrs) and dinner.
  • Day 4: at home or at the local piazza cafe. Cooking class (2 hrs) and lunch. Check-out and drive to Cesena or Arezzo Train Station.

Special note: This cooking experience vacation package includes an immersive 20 hours of hands-on Italian cooking classes.

During your stay, you’ll have exclusive access to Chef Stefano’s 4 bedroom, 2 bathroom historic stone house — completely private for you and your group. This 19th-century retreat features charming antiques, two fireplaces, a traditional stone oven, and a peaceful garden along the early waters of the Tevere (Tiber) River. It’s quiet, authentic, and the perfect place to unwind after a day of cooking and exploring.
